I've used GraphicConverter for/on editing for years on the Mac side. It's a poor man's PhotoShop much like GIMP is.

SilverFast SE Plus for scanning software, also been using this software for years (with 2 scanners), has a lot of PhotoShop type Tools/setting when scanning. Not to bad on pricing for it (under $120 for SE Plus version) and you can try it out with trial software to see if you like it or not. Here: http://www.silverfast.com/
