Maybe it's just my interests (horror, space, etc.) But every time I preview a book that I might be interested in it contains 3-4 small 6 pages stories.
I'm really looking for a longer, more developed plot line.
I've never read the older Silver/Golden age comics... is this how they all were written back in the day? Have I just got used to the 22 page story format that we see today per issue?
If you have any suggestions I would love to hear them.

For the most part, yes. There are a few exceptions, the Fawcett movie books and some Dell 4 Colors are one story per book.

Check out some of the early "Wonder Comics" (by Better/Standard/Nedor) stories featuring the Grim Reaper. Written by Richard Hughes, they may not be 22 pagers, but they're pretty densely packed with story.

As expert for pre-code horror I can tell you that 7 pages were the norm.
Some companies packed even shorter stories (mostly Atlas) and presented 3-4 page "quickies" (as I like to call them).
They are in general quite bullshitty.
Please try the horror books from ACE (Beyond, Web Of Mystery, Hand Of Fate, Baffling Mysteries) - though 7 pages as well, they are quite elaborate and "wordy".

And another tip:
Fawcett horror books feature three long 10-page stories (up to the beginning of 1953).
Go look for This Magazine Is Haunted, Worlds Of Fear and Beware! Terror Tales.

The Avon one shots are often single story. Book and movie adaptations are long stories. Crimebuster stories were long in Boy Comics as well Black Diamond in Black Diamond Western.
